Oak Chips will allow you to imitate storing your wine in an oak barrel without the expense. For white wine, 2 oz of chips is recommended. Try 2-4 oz for a red wine or beer. Simply boil in water for 10 minutes or steep in a neutral spirit like vodka, then add the chips to your plastic or glass fermenter.
