This malt is acidulated with lactic acid and can be used to lower mash pH. Use up to 3% in dry stouts to add a tang to the finish, and up to 8% to create the sour character of a Berliner Weisse without adding lactobacillus to the fermentation. Also useful in Lambic, Gueze, and sour brown ales.
